Italian Gelato & Frozen Desserts Workshop

Overview

This 2-day workshop is designed for beginners who want to learn the basics of making professional-quality gelato and frozen desserts using Fugar ingredients and bases. You will learn how gelato and frozen desserts are made from start to finish, with clear, step-by-step guidance.

Participants will learn how to balance simple recipes for artisan gelato, sorbet, and modern frozen desserts. The workshop explains ingredients in an easy way, including how sugars, fats, and stabilizers work together to create smooth texture, easy scooping, and great taste.

The training covers every stage of production, including mix preparation, pasteurization, aging (maturing), and freezing, using both traditional and modern methods. You will also learn how to create classic flavors, try new flavor ideas, add inclusions and swirls correctly, and understand how to improve product stability and shelf life.

By the end of the workshop, participants will gain hands-on experience producing a complete range of gelato and frozen desserts, building confidence to start or improve their gelato-making journey.
