Chef Ziad Jallad

Chef Ziad Jallad is a bakery expert with over 30 years of professional experience across artisanal and industrial baking. His career covers traditional bread production, semi-automatic lines, and fully automatic production systems, with specialization across fresh bakery, par-baked frozen bakery, unfermented dough, pre-fermented dough, and viennoiserie. He is widely recognized for his deep knowledge in sourdough science and fermentation.

Chef Ziad completed several advanced technical programs and seminars with Puratos Belgium, where he also worked as a Bakery Technical Advisor for 11 years. His professional journey includes five years of bakery work in Halifax, Nova Scotia (Canada), which expanded his knowledge in North American bakery applications.

Today, Chef Ziad is a Bakery Application Specialist and Technical Development Manager at LAB1O1 by AMFoods, where he develops bakery recipes, optimizes dough formulations, and adapts them to different production technologies and production line requirements.
